A Conversation with Chef Lorenzo of GEORGE

Known for its refined tasting menus, warm hospitality, and thoughtful approach to seasonal ingredients, the restaurant offers an experience that feels both elevated and deeply personal.

To learn more about the story behind the kitchen, we sat down with Chef Lorenzo to discuss where his passion for food began, how his culinary philosophy has evolved, and what continues to make GEORGE such a meaningful part of Toronto’s dining scene.

1.      Cooking often reflects personal history. Can you share where your passion for food began and how those early experiences shaped you as a chef?

Ever since I can remember, food has been an absolute obsession for me. I grew up in an environment where food was always of central importance. I found myself helping out in the kitchen whenever I could. Those early experiences taught me to respect ingredients and shaped my hands-on approach to cooking today.

2.      Your approach to cooking feels both refined and deeply intentional. How would you describe your culinary philosophy today?

My philosophy is rooted in the belief that, as a chef, your cooking should directly reflect who you are and what you genuinely love to eat. Practically, it is incredibly important to me to design a balanced plate, as opposed to creating a meal that is strictly protein-heavy. Every element on the plate deserves equal attention.

3.      GEORGE has become a Toronto institution over the years. From your perspective in the kitchen, what do you think defines the GEORGE experience?

From the kitchen’s perspective, the GEORGE experience is defined by contrast. It starts with making guests feel completely welcome and at ease the moment they arrive. Once they are comfortable, we invite them to partake in an exciting, highly engaging culinary journey that challenges and delights their palate.

4.      Seasonality plays a big role in great cooking. How do fresh, seasonal ingredients influence the way you create menus at GEORGE?

Our menus centre entirely around seasonality. We always strive to source local Ontario and Canadian products first. While winter and early spring make local sourcing much harder, we adapt by building menus around hearty root vegetables and hothouse produce. To fill any remaining seasonal gaps, we selectively bring in premium specialty items, especially from Europe, to maintain our high standards.

5.      For someone visiting GEORGE for the very first time, which dish or tasting experience best represents what the restaurant is all about?

If it is your first time visiting GEORGE, our signature seven-course tasting menu is an absolute must-try. To make the evening interactive, you and your guest will actually receive completely different dishes for each course. This unique format allows you to share your plates, taste a wider variety of flavours, and have fun together.

6.      A memorable dining experience goes beyond the food. How do service, atmosphere, and storytelling come together at GEORGE?

A truly great dining experience requires a perfect balance between the kitchen and the floor. The moment you walk in, our hospitality ensures you feel welcome. Even though our food and beverage programs are highly elevated, we keep the atmosphere relaxed so guests never feel intimidated by fine dining. We also offer expert wine pairings to seamlessly tie the meal together and complement every flavour on the plate.

7.      Elm-Ledbury residents are just steps away. How do you see GEORGE fitting into the everyday lifestyle of the surrounding community?

8.      Looking ahead, what excites you most about the future of GEORGE and continuing to evolve alongside Toronto’s food and cultural scene?

Having been a cornerstone of Toronto’s food scene for 23 years, it is incredibly exciting to realize there is a whole new generation of diners who have yet to experience GEORGE. The surrounding neighbourhood is developing beautifully. Having new residents living just steps away — who can easily visit and appreciate the craftsmanship of what we do — inspires us to keep evolving.
